Tuscan Tomato Pasta

When I was in college I used to love to make this dish.  It's evolved a little since then (I married an Italian for goodness sakes!).  It's really pretty simple to make and it tastes good.  Here's what you need:

  • Box of pasta
  • Carton of grape or cherry tomatoes
  • Olive oil (we used garlic olive oil)
  • Garlic Powder or fresh garlic (if not using garlic olive oil)
  • Salt
  • Oregano
  • Parmesan cheese
Start by boiling a pot of water for the pasta. While the water is boiling, cut the tomatoes in halves or thirds.  Place them in a pan.
While the pasta is cooking, cook the tomatoes in the olive oil.  Add some salt, oregano and garlic to taste.

Once the pasta is cooked drain it and add it to the tomatoes in the pan on the stove and stir everything together.  Let everything simmer together for a few minutes.

Add a generous amount of Parmesan cheese to the top and stir in.  Enjoy!
