Green Goddess Juice - Smoothie Saturday #10

By Vicky Nardone

I have been obsessed with juices lately - ever since we tried the juices at Ashkers on a recent buffalo food tour.  I decided to use the juicer that Matt and I got from his parents for our wedding to try and recreate my favorite juice from Ashkers at home.  Matt and I asked for a "masticating" juicer - it chews up your fruit for you and spits out the juice.  Kind of weird right?  It produces really good juice though!

Anyway, I am calling this juice Green Goddess Juice.  It is a combination of pineapple, apple, spinach and kale.  And no, you can't taste the spinach and kale.  The sweet pineapple/apple juice combination covers it right up.  So you're getting all the nutrients of the spinach and kale with a nice sweet taste to cover them.

Ingredients
  • 1 pineapple
  • 3 apples
  • 1/2 bag of spinach
  • 1/2 bag of kale
Cut the pineapple into chunks small enough to fit in your juicer.  Peel the apples and slice them into chunks as well.  Feed all the fruit and veggies into the juicer.  Strain the juice.  Refrigerate.  The juice will last for about a week in the fridge.  The ingredients listed make about 2 to 2 and 1/2 full glasses of juice.

Hope you enjoy!
